On 11, 12 and 13 April at the Centre d’Excellence des Professions Culinaires (CEPROC) in Paris, Gauthier Hill, Catering Chef and Founder of “Hille Traiteur”, and our Chef Trainer Sébastien Charretier competed as a team for the French Selection of the International Catering Cup 2023.

Created and organised by the Confédération Nationale de Charcutiers Traiteurs (CNCT), this international competition brings together, every two years, the best talents in the profession to reveal their creativity and know-how for the benefit of gastronomy.

After three days of intense tests and hard work, our two teammates have won the Gold Trophy and qualify for the grand final of the competition which will take place at SIRHA 2023, and which will see 12 pairs from 12 different countries compete against each other, all determined to win the title of Best Caterer in the World.

This was a wonderful reward for our two finalists who trained for months to develop their recipes and perfect their techniques, and who showed great professional complicity and exemplary physical and mental stamina during these days of competition.

During the national selection, the teams were evaluated during the following tests:

  • 1st daylayout, unloading and setting up the box
  • 2nd day10 hours of recipe preparation according to the topics defined by the CNCT members :

Starters: 3 poultry and caviar appetizers

Hot fish : 1 ballotine of fish and its hot and cold sauce / 1 vol-au-vent from the sea

Hot dish : 1 trilogy of pigs

Dessert: 3 pieces around coffee (progress, entremet and soufflé)

  • 3rd day: 1 hour to set up the buffet + 2 hours and 15 minutes to finalise the preparations, reheat and prepare each dish for the jury, made up of 5 Meilleurs Ouvriers de France Charcutiers-Traiteurs and 1 Meilleur Ouvrier de France Chocolatier

For this edition, our pair wanted to work on eco-responsibility and collaborated with Murielle Bailet, Meilleure Ouvrière de France Fleuriste, for the creation of the buffet and its plant compositions.

A new adventure now begins for our two teammates, Sébastien Charretier and Gauthier Hille, who must prepare for the grand final of the International Catering Cup and compete against the best butcher-caterer in the world.
